Cornmeal Crusted Sole

This is a great family-friendly baked sole dish that's quick and easy to prepare. Serve with seasonal vegetables.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/3 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp paprika
  • 1 pound sole fillets

Preparation:

Preheat oven to 400 degrees. Coat a large cookie sheet with nonstick cooking spray. combine flour, cornmeal and paprika in a shallow bowl or plate. Dredge sole fillets in flour and cornmeal mixture, shake off excess and place on cookie sheet. Bake for 10 minutes, or until fish flakes easily.

Serves 4.
