Cook Time: 25 minutes
Ingredients:
- 2 tsp olive oil
- 1 pound leeks, white and light green parts only, cleaned and sliced
- 2 garlic cloves, finely chopped
- 8 ounces mushrooms, sliced
- 1 14.5-ounce can petite-diced tomatoes
- 1 pound cod fillet, cut into 4 pieces
- 1/2 cup fresh chopped parsley
Preparation:
Preheat oven to 450 degrees. In a large oven-proof skillet sauté leeks, garlic and mushrooms in olive oil until softened. Add tomatoes and simmer for 5 minutes. Place cod fillets in skillet on top of vegetables. Cover and place in oven for 15 minutes.
Uncover and sprinkle with fresh parsley.
