Cod is a mild-tasting fish that lends itself to a variety of flavors. Feel free to use another white fish if you prefer. Serves this cod and leeks meal with a side dish of whole grain rice or couscous. INGREDIENTS:
PREPARATION:Preheat oven to 450 degrees. In a large oven-proof skillet sauté leeks, garlic and mushrooms in olive oil until softened. Add tomatoes and simmer for 5 minutes. Place cod fillets in skillet on top of vegetables. Cover and place in oven for 15 minutes. Uncover and sprinkle with fresh parsley.
