Lemon-Herb Fish Kebabs

Cod or halibut fillets are ideal for these succulent, flavorful fish kebabs. A simple lemon-herb marinade is all you need. Serve with grilled vegetables and some whole grain rice.

INGREDIENTS:

  • 20 ounces firm, skinless white fish fillets (such as cod or halibut)
  • 1 tbsp olive oil
  • 1 tbsp dried Herbs for Fish blend*
  • 1/4 cup lemon juice

PREPARATION:

If you plan to use wooden skewers, soak them in water for 30 minutes before use.

Cut fish into 1 inch pieces and place in a glass dish. In a small bowl combine oil, herbs and lemon juice. Drizzle over fish pieces and turn them to coat. Cover and marinate for 15 minutes.

Preheat broiler or grill. Coat broiler pan or grill with nonstick cooking spray. If grilling, coat grill before heating.

Thread fish pieces on to skewers and broil or grill for 5 minutes each side. Serve on a bed of whole grain rice and with grilled vegetables.

*My Herbs for Fish blend has parsley, basil, onion, garlic, chervil and lemon pepper.
