While it’s undoubtedly true that using low-fat ingredients can change the texture of baked goods, you can do three things to avoid dry or dense cakes and muffins.
  • First, rather than scooping measuring cups into the flour and packing them full, lightly spoon the flour into the measuring cups, and level them with the back of a knife.
  • Second, when combining the wet and dry ingredients, don’t overmix—simply stir until just moist.
  • Third, check your muffins, cakes and quick breads a minute or two before the stated baking time, or at the earliest time in a given range.
