I find big popcorn balls hard to eat, so here are some bite-sized popcorn balls that are just as sweet, only more manageable to eat, and of course, lower in fat. Now this is one messy recipe, so be sure to spray your hands with nonstick cooking spray to avoid a big gooey mess.

Prep Time: 20 minutes

Cook Time: 8 minutes

Ingredients:

  • 1 3-ounce bag of popcorn
  • 3/4 cup candy corn
  • 2 tbsp butter
  • 1 10.5 ounce bag mini marshmallows
  • red and yellow food coloring to make orange (optional)
  • 1/2 tsp ground cinnamon
  • nonstick cooking spray

Preparation:

Line a large baking tray with wax paper or parchment.

Pop popcorn in microwave according to the package/microwave instructions. Empty popped popcorn into a large bowl, weeding out unpopped kernels if you can.

Add candy corn to bowl and mix.

Gently melt butter in a large saucepan. Add mini marshmallows and melt on low heat for 6-8 minutes, stirring constantly. Stir in food coloring, then sprinkle cinnamon.

Using a spatula, scoop melted marshmallow mixture over popcorn and candy, and blend well.

Spray hands with nonstick cooking spray, and roll mixture into 1 1/2 inch balls. Place them on the lined cookie tray to set.

Yields 24-30 popcorn balls depending on actual size.
