This is truly a quick and easy pudding to prepare, and great for the kids, even if they claim not to like pumpkin pie.

Prep Time: 2 hours, 4 minutes

Total Time: 2 hours, 4 minutes

Ingredients:

  • 1 3.4 ounce box Instant Butterscotch Pudding and Pie Filling
  • 1 1/2 cups cold nonfat milk
  • 1 15-ounce can pure pumpkin
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg

Preparation:

Whisk butterscotch pudding and milk for two minutes. Stir in pumpkin, vanilla, cinnamon, ginger and nutmeg, blending well. Pour into 4 dessert glasses or bowls. Refrigerate until ready to serve. Top with a dollop of fat-free whipped topping or a few pieces of candy corn.

This is a quick and easy recipe and gets your kids to eat pumpkin. It can also be made with vanilla pudding or sugar free instant pudding if you need to lower the calorie/sugar amount in the recipe.
