Low Fat Orange Cream Pie

This is an easy light and creamy dessert that slices like pie, only there's no crust. Any flavor of gelatin would work well, but orange is a favorite in our house.

Prep Time: 4 hours, 10 minutes

Ingredients:

  • 1 3-ounce pack orange gelatin
  • 1/2 cup boiling water
  • 1 cup low fat cottage cheese
  • 1 8-ounce pack fat-free cream cheese, softened
  • 2 cups fat-free cool whip
  • 1 8-ounce can mandarins, drained

Preparation:

Place gelatin powder and water in a small bowl. Stir until dissolved. Add dissolved gelatin to a blender with cottage cheese and cream cheese. Blend until smooth. Empty into a large bowl. Stir in cool whip and spoon into pie plate. Top with mandarin slices. Refrigerate for 4 hours.
