Ingredients:
- 1 3-ounce pack orange gelatin
- 1/2 cup boiling water
- 1 cup low fat cottage cheese
- 1 8-ounce pack fat-free cream cheese, softened
- 2 cups fat-free cool whip
- 1 8-ounce can mandarins, drained
Preparation:
Place gelatin powder and water in a small bowl. Stir until dissolved. Add dissolved gelatin to a blender with cottage cheese and cream cheese. Blend until smooth. Empty into a large bowl. Stir in cool whip and spoon into pie plate. Top with mandarin slices. Refrigerate for 4 hours.Serves 8
