This tangy lemon dessert is completely fat free.
- 2 cups water
- 1/2 cup sugar
- 8 tbsp fresh squeezed lemon juice
- Grated rind of 1 lemon
- Lemon zest and sprig of mint for garnish
Add sugar to water in a large heavy-bottomed pan. Stir over a low heat until sugar dissolves. Bring to a boil, then remove from heat and allow syrup to cool. Once cool, add lemon juice and rind, and stir well. Pour mixture into a shallow freezer container and freeze until solid - about 3 hours. Remove from freezer and turn out syrup into a food processor or blender. You might need to place the container bottom into hot water for a short time to help release the frozen syrup. Process or blend to small crystals. Gently scoop balls of lemon ice into 4 dessert bowls and garnish with lemon zest and mint. Serve immediately.
