Lemon and Blackberry Parfait

Parfaits are so simple make. Serving them in clear glasses makes them look attractive, too.

Prep Time: 10 minutes

Ingredients:

  • 1 3 1/2-ounce package of Lemon Pudding and Pie Mix
  • 1 1/2 cups nonfat milk
  • 2 6-ounce packs fresh blackberries
  • 1 1/2 cups fat-free whipped topping

Preparation:

Prepare lemon pudding according to package instructions, using the nonfat milk. Layer blackberries, pudding, and whip in four dessert glasses, starting with fruit and saving a few blackberries for garnish. Chill before serving.

Serves 4.
