Strawberry-Rhubarb Parfaits

This reminds me of a cold version of an English dessert called rhubarb and custard. Once again I make use of packaged vanilla pudding and pie mix, to make the custard base. But I make a fresh strawberry-rhubarb compote to go with it. Strawberries and rhubarb complement each other nicely, since most people find rhubarb by itself to be too tart.
