Low Fat Cranberry Macaroons

These festive little cookies are a light yet chewy and sweet treat.

Cook Time: 12 minutes

Ingredients:

  • 2 egg whites
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 cup sugar
  • 1/2 cup shredded coconut
  • 1/2 cup dried cranberries
  • 1 1/4 cups crisp rice cereal

Preparation:

Preheat oven to 350 degrees. Line a cookie sheet with a silicone mat or parchment paper.

In a medium bowl, whisk egg whites, salt and vanilla extract until soft peaks begin to form. Add sugar 1 tablespoon at a time, mixing well after each addition, until firm and glossy. Stir in coconut, cranberries and rice cereal. Drop in mounds on to cookie sheet. Bake for 12 minutes until lightly browned on top.

Makes 12 cookies.
