Ingredients:
- 1 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried tarragon
- 1 garlic clove, minced
- 1 2-2 1/2-pound trimmed beef tenderloin
- Freshly ground black pepper
Preparation:
Preheat the oven to 425°F.Combine oil, herbs and garlic in a small bowl. Rub the tenderloin with the herb mixture and sprinkle with black pepper. Place the beef on a rack in a shallow roasting pan.
Roast tenderloin until an instant-read thermometer registers 130 degrees for medium-rare, about 30-40 minutes depending on degree of desired doneness. Remove from oven and let stand for 10 minutes before slicing.
