Ingredients:
- 1 1/4 cups all-purpose flour
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup butter, softened
- 2/3 cup sugar
- 1 egg white
- 1 tsp vanilla extract
Preparation:
Combine flour, baking soda and salt in a small bowl.In a large bowl, beat butter and sugar together with an electric mixer until well blended. Add egg white and vanilla and beat until well combined.
Gradually stir in flour mixture with a wooden spoon or spatula. Gather dough in a ball and on a piece of wax paper form the dough into a 6-inch log. Wrap and place in the freezer for 3 hours.
When ready to bake cookies, preheat oven to 350 degrees. Line a large cookie sheet with parchment paper or silicone mat. Remove cookie dough from freezer and slice into 1/4-inch rounds. Sprinkle with seasonal sugars if you like. Place 1-inch apart on cookie sheet.
Bake for 8-10 minutes until lightly golden.
