Low Fat Icebox Cookies

Colorful little sugar cookies make a nice holiday treat, either for your family or as a gift to friends and neighbors.

INGREDIENTS:

  • 1 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup butter, softened
  • 2/3 cup sugar
  • 1 egg white
  • 1 tsp vanilla

PREPARATION:

Combine flour, baking soda and salt in a small bowl.

In a large bowl, beat butter and sugar together with an electric mixer until well blended. Add egg white and vanilla and beat until well combined.

Gradually stir in flour mixture with a wooden spoon or spatula. Gather dough in a ball and on a piece of wax paper form the dough into a 6-inch log. Wrap and place in the freezer for 3 hours.

When ready to bake cookies, preheat oven to 350 degrees. Line a large cookie sheet with parchment paper or silicone mat. Remove cookie dough from freezer and slice into 1/4-inch rounds. Sprinkle with seasonal sugars if you like. Place 1-inch apart on cookie sheet.

Bake for 8-10 minutes until lightly golden.

Makes 24 cookies.
