These chewy, fruity chocolate chip bars make a great holiday treat. Whip up a batch for a holiday cookie exchange, or pack them as a holiday gift from your kitchen. But don't just eat them during the winter holidays. Make some to take on a picnic, for a potluck or as a lunchbox treat.

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp melted butter
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla
  • 1/2 cup dried mixed fruit, chopped
  • 1/4 cup semisweet chocolate chips (miniature ones spread further)

Preparation:

Preheat oven to 350 degrees. Coat an 8-inch by 8-inch baking pan with nonstick cooking spray.

Stir flour, baking powder and salt in a small bowl. In a medium bowl, stir melted butter and brown sugar together with a spatula or wooden spoon. Add egg and vanilla, and stir until smooth. Gradually stir in flour mixture. Fold in dried mixed fruit and chocolate chips.

Spread dough into baking pan. Bake for 22-25 minutes, until a toothpick inserted in the middle comes out clean. Allow to cool.

Cut into 12 bars.

This is very chewy and sweet with the dired fruit. i used raisins and cranberries in mine and they were great! These would also make a nice gift wrapped in beautiful paper!
