Sausage and Beans is one of those comfort food dishes that can be made lighter without affecting the flavor and texture of the dish to any significant degree. I used Isernio's Mild Italian Chicken Sausages for this sausage and beans recipe. Enjoy with a side of skinny mashed potatoes, using low-fat milk instead of butter and cream.

Cook Time: 16 minutes

Ingredients:

  • 2 tsp olive oil
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 4 mild Italian chicken sausage links
  • 1/2 cup fat-free, low-sodium chicken broth
  • 1 14.5 ounce can petite diced tomatoes
  • 1 15-ounce can baked beans
  • 2 tsp Worcestershire Sauce

Preparation:

Heat oil on medium heat in a large skillet. Sauté onions and garlic for 4-5 minutes until softened. Add sausage links and broth, cover and steam for 2-3 minutes until plump. Uncover skillet and pierce sausages, Add canned tomatoes, baked beans, and Worcestershire sauce. Cook for 6-8 minutes, until sausages are cooked through.
