Skillet Sausage and Vegetables

This skillet sausage and vegetables is a quick and easy low-calorie, low-fat meal that can be on the table in under 30 minutes.

Prep Time: 5 minutes

Cook Time: 18 minutes

Total Time: 23 minutes

Ingredients:

  • 2 tsp olive oil
  • 1/2 cup finely chopped shallots
  • 1 medium zucchini, halved lengthwise, then sliced
  • 1 small red bell pepper, chopped
  • 1 cup sliced cremini mushrooms
  • 12 ounces sweet Italian chicken sausage, sliced
  • 1 cup fat-free, low-sodium chicken broth
  • 1 tbsp Dijon mustard
  • 1 tbsp cornstarch dissolved in 4 tbsp water

Preparation:

Heat oil in large skillet on medium heat.

Add shallots, zucchini, pepper and mushrooms, and sauté for 5 minutes.

Add sliced sausages, and cook for 5 minutes.

Add broth and mustard, and simmer for 5 minutes.

Stir in cornstarch mixture; cook for 2 minutes.

Serve over hot whole grain rice.

skillet sausage & veggies, Member chefcristo

haven't tried it yet, but sounds good to me. would use either turkey or chicken breakfast or italian sausage (hot or sweet) and add celery slices and sliced water chestnuts.
