Ingredients:
- 2 tsp olive oil
- 1/2 cup finely chopped shallots
- 1 medium zucchini, halved lengthwise, then sliced
- 1 small red bell pepper, chopped
- 1 cup sliced cremini mushrooms
- 12 ounces sweet Italian chicken sausage, sliced
- 1 cup fat-free, low-sodium chicken broth
- 1 tbsp Dijon mustard
- 1 tbsp cornstarch dissolved in 4 tbsp water
Preparation:
Heat oil in large skillet on medium heat.
Add shallots, zucchini, pepper and mushrooms, and sauté for 5 minutes.
Add sliced sausages, and cook for 5 minutes.
Add broth and mustard, and simmer for 5 minutes.
Stir in cornstarch mixture; cook for 2 minutes.
Serve over hot whole grain rice.
