Some of the best dishes come together from ingredients you just happen to have on hand. I knew I had some chicken breasts in the refrigerator, some cremini mushrooms in a brown bag, and a little red wine left over from last night's dinner, which my husband had resealed to keep it fresh. Rummaging around in my refrigerator and pantry, I pulled out some other random ingredients; then I reached for my slow cooker. The end result? A comforting and delicious low-fat chicken and mushroom stew.
