It's not hard to make a lower fat muffin because ingredients such as fruit purees or canned pumpkin make great fat substitutes. These low fat pumpkin apple muffins, which contain both canned pumpkin and applesauce, make a great snack or brunch item.

Ingredients:
- 2 cups all purpose flour
- 1/2 cup brown sugar
- 1 tbsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 2 egg whites
- 1 tbsp canola oil
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1/2 cup unsweetened apple sauce
- 1 medium granny smith apple, peeled cored, and diced
Preparation:
Preheat oven to 400 degrees
Line 12-hole muffin pan with paper cases.
In a large bowl whisk flour, sugar, pumpkin pie spice, baking powder, baking soda, salt. In a medium bowl, combine egg, egg whites, oil, pumpkin puree and applesauce.
Add wet ingredients to dry and stir until just moistened. Fold in diced apple. Spoon into muffin pan and bake for 16-18 minutes.
