One of my favorite Christmas presents this year was a Belgian waffle maker, so much to my kids' delight, I've been making waffles every weekend. Now waffles are not the most healthful of breakfast foods, but with a little tweaking, it's possible to make delicious low fat waffles such as these. Top them with fresh fruit, and a little powdered sugar or low fat vanilla yogurt.

Prep Time: 10 minutes

Cook Time: 3 minutes

Total Time: 13 minutes

Ingredients:

  • 3/4 cup whole wheat pastry flour
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1/2 cup liquid egg substitute
  • 1 cup fat-free milk
  • 1 tsp vanilla extract

Preparation:

Preheat waffle maker

Whisk dry ingredients in a medium bowl. Add egg substitute, milk and vanilla extract, and whisk until smooth.

Ladle 2/3 cup of batter into preheated waffle maker, and cook for 3-4 minutes, or until golden.

Makes 3 Belgian waffles

For a lower fat waffles, try adding NO sugar and NO vanilla flavouring. The remaining ingredients are fine. The topping is the only allowed to be sweet. the cook's imagination is the limit. Maple syrup is my favourite. I've tried with honey and walnuts and is also something out of this world. In Winter weekends, this is my family's favourite breakfast. A nice and strong cup of tea to accompany. Delicious!!!!!!!!!!!!!!!!!!!!!
