Perfect for breakfast or lunch, enjoy this burrito-style huevos rancheros, or Mexican eggs in a wrap. It might not be authentic, but it's certainly delicious. Serve with some fresh fruit on the side.

Cook Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 4 low-fat flour tortillas
  • 1 cup mild or medium salsa
  • 1 cup liquid egg substitute
  • 1/4 cup nonfat milk
  • 1/2 cup shredded reduced-fat Jack cheese

Preparation:

Warm tortillas according to directions on package. In a small saucepan, heat salsa on low until heated through.

Meanwhile, whisk egg substitute and milk in a small bowl. Cook in a nonstick skillet over medium heat, gently lifting the setting egg substitute mixture to allow the rest of the liquid to cook.

When eggs are cooked through, though still moist, remove from heat and divide into four.

Spread heated salsa on warmed tortillas, followed by one-fourth of the egg substitute. Sprinkle with cheese, then roll burrito style.

Serves 4.

I tweeked it and WOW!!!, Member cbdances4god

So I was looking for egg white recipes of the lower-fat option, and I came across this. I love Mexican food, so I thought I'd try it. I used liquid egg whites, wasabi arugula, salsa, sea salt, and BARBEQUE mayo!!! I ground the arugula in my Magic Bullet, then added the eggwhites to it, and mixed it up for literally 2 seconds. This turned my eggs green, and almost foamy. When I was cooking the egg white and arugula mixture, I added garlic and herb shredded cheese. I heated the tortilla very carefully, then put the egg on it. I topped it with salsa and barbeque mayo, which is a new product made by President's Choice. Because the wasabi augula has a spice to it, it totally completed the flavor! So did the bbq mayo-DELICIOUS!!!
