Cook Time: 12 minutes
Ingredients:
- 1 cup whole wheat pastry flour
- 1 1/2 cups oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup firmly-packed brown sugar
- 2 egg whites
- 2 tbsp canola oil
- 1 very ripe medium banana, mashed
- 1 tsp vanilla extract
- 1 cup dried fruit (such as Sunsweet Antioxidant blend)
Preparation:
Preheat oven to 350 degrees.In a large bowl, combine flour, oats, baking powder, baking soda, salt and sugar. Add egg whites, oil, mashed banana and vanilla. Mix well with a wooden spoon. Fold in dried fruit. Drop by tablespoon full on to baking sheet lined with parchment or silicone mat. Bake for 12 minutes or until lightly golden.
