Low Fat Berry Pancakes
Pancakes are a favorite weekend breakfast at our house. I'm sure we're not alone in this. These are wholesome, healthy and delicious.

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 1 egg, lightly beaten
  • 1 1/4 cups low fat buttermilk
  • 2 tsp canola oil
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen mixed berries, thawed and drained

Preparation:

Stir together dry ingredients in a medium bowl. In a separate bowl, combine egg, buttermilk, oil and vanilla. Add wet ingredients to dry; stir until just moist. Gently fold in berries.

After spraying with nonstick cooking spray, heat a nonstick skillet or nonstick griddle over medium-high heat (to 375 degrees). Pour 1/4 cup batter and cook for about 1 1/2 minutes until pancake begins to bubble. Flip pancakes and cook 1 minute more, until lightly browned. Serve with more berries and a scoop of low fat vanilla yogurt.

I tried these on this rainy Saturday morning. My blackberries were so fat I decided just to make the pancake plain and enjoy them on top with a little fat-free berry yogurt. The combination of all-purpose and whole wheat flour kept them from being too heavy and the flavor was very nice. A nice ""treat"" as I try to make this a healthier year!
