Ingredients:
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 3 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch salt
- 1 egg, lightly beaten
- 1 1/4 cups low fat buttermilk
- 2 tsp canola oil
- 1 tsp vanilla extract
- 1 cup fresh or frozen mixed berries, thawed and drained
Preparation:
Stir together dry ingredients in a medium bowl. In a separate bowl, combine egg, buttermilk, oil and vanilla. Add wet ingredients to dry; stir until just moist. Gently fold in berries.After spraying with nonstick cooking spray, heat a nonstick skillet or nonstick griddle over medium-high heat (to 375 degrees). Pour 1/4 cup batter and cook for about 1 1/2 minutes until pancake begins to bubble. Flip pancakes and cook 1 minute more, until lightly browned. Serve with more berries and a scoop of low fat vanilla yogurt.
