Apple Oatmeal

Get your morning off to a great start with this warming apple oatmeal. It's sweet and full of fiber.

  • 3 cups apple juice
  • 1/2 tsp ground cinnamon
  • 1 1/2 cups quick oats
  • 1/2 cup chopped apple
  • 1/4 cup maple syrup
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 4 tbsp fat free vanilla yogurt


Combine apple juice and cinnamon in a medium saucepan. Bring to a boil. Stir in oats, chopped apple, maple syrup and raisins. Reduce heat and cook until most of juice is absorbed, stirring occasionally. Fold in walnuts.

Serves 4. Top each bowl with a tablespoon of yogurt.

This was better than expected!, Member Sandrat954

I prepared this dish yesterday morning for me and my girlfriend and she loved it! I although thought that the dallop of vanilla yogurt was rather tangy to be added to oatmeal. Also I omitted the maple syrup and used pancake syrup instead. I also omitted the walnuts and used almonds instead because I ""love"" almonds. I also added a little low fat margarine during the cooking process. While cooking I did think it would come out needing some sugar, but none was needed at all. The syrup, the apples, and the apple juice sweetened it just fine. I used red delicious apples as well. Now the apples are aesthetically pleasing to the eye with the skin on, but for enjoyment purposes next time I will not leave the skin on. It tends to get stuck in your teeth while eating the oatmeal. But nonetheless, it was a VERY filling breakfast to start your day off. And it was Delicious!
