Here's a great way to use some overripe bananas and also get a quick chocolate fix. Whole wheat pastry flour keeps the banana bread wholesome yet tender.

Cook Time: 1 hour

Ingredients:

  • 1 3/4 cups whole wheat pastry flour
  • 1/4 cup unsweetened cocoa powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup firmly packed brown sugar
  • 1 tbsp canola oil
  • 1 large egg beaten
  • 1/2 cup low-fat buttermilk
  • 1 tsp vanilla
  • 1 1/2 cups mashed bananas (about 2 medium)
  • 1/3 cup mini chocolate chips (optional)

Preparation:

Preheat the oven to 350 degrees.

Whisk flour, cocoa powder, baking soda and salt in a large bowl. Combine sugar, oil, egg, buttermilk and vanilla in a medium bowl. Add wet ingredients to dry, and stir until just moist. Fold in mashed bananas, followed by chocolate chips if using. Empty batter into a 9 x 5 loaf pan coated with nonstick cooking spray.

Bake for 55 minutes to an hour.
