Ingredients:
- 1 cup whole-wheat flour
- 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/2 cup firmly-packed brown sugar
- 1 large egg, lightly beaten
- 1/2 cup no-sugar-added applesauce
- 1/4 cup nonfat milk
- 1 cup mashed sweet potato
- 2/3 cup chopped dates
Preparation:
Preheat oven to 350 degreesCombine flour, baking powder, cinnamon, nutmeg and sugar in a large bowl. Place egg, milk, applesauce in a small bowl. Add wet ingredients to dry. Stir in mashed sweet potato, followed by chopped dates. Spoon batter into a 9 x 5 loaf pan coated with nonstick cooking spray.
Bake for 1 hour or until toothpick inserted in center comes out clean.
