Chocolate Chip Raisin Cookies

A great cookie to serve warm as an after-school treat or to pack in a lunch box. These cookies are lower in fat than regular chocolate chip cookies, yet taste delicious. If you prefer, omit the chocolate chips and add more raisins, reducing the fat content even more. Or you could replace the chocolate chips with an equivalent amount of heart-healthy walnut pieces.

Ingredients:

  • 1 cup all-purpose flour, spooned into a measuring cup
  • 1 tsp baking powder
  • Pinch of salt
  • 2/3 cup firmly packed brown sugar
  • 1/3 cup canola oil
  • 1 egg, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup oats (not quick-cooking or instant)
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup raisins

Preparation:

Preheat oven to 350 degrees. Line two cookie sheets with parchment paper or silicone mats.

Whisk flour, baking powder, and salt together in a large bowl. In a medium bowl, mix brown sugar, oil, egg and vanilla with an electric mixer. Stir in flour mixture, followed by oats, chocolate chips and raisins. Drop by the tablespoonful onto cookie sheets, 2 inches apart. Makes about 18 cookies.

Bake cookies for 12-14 minutes, until edges are golden. Cool for 1 minute, then transfer to wire racks to cool completely.

These tasty guilt-free treats plump up so nice and stay moist, they are really delicious! The recipe makes a small batch, 14 for me using a cookie dough scoop. I will probably double it the next time. I highly recommend to anyone!
