Blueberry Buttermilk Cake

This delicious reduced fat blueberry buttermilk cake is perfect for brunch or as an afternoon teatime treat.

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 tbsp butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1 egg white
  • 1 tsp vanilla extract
  • 1 cup low-fat buttermilk
  • 1 cup blueberries

Preparation:

Preheat oven to 350 degrees

Coat a 9-inch cake tin with nonstick cooking spray

Whisk flour, baking powder, baking soda and salt together in a small bowl

In a large bowl, and using an electric mixer, beat softened butter and sugar on medium speed until blended. Add egg, egg white and vanilla and mix; add buttermilk and mix well.

Mix in flour.

Spoon batter into prepared pan. Sprinkle blueberries on top.

Bake for 35-40 minutes, until golden and a knife inserted in the center comes out clean.

Fabulous and Delicious Blueberry Buttermilk Cake, Member barbaramintz

This cake was so moist, delicious and tasted great. I will be making this when the gals come to play mah-jongg. It was so easy and took very little time to throw together. I bought fresh blueberries at Trader Joe's as well as their buttermilk (both inexpensive). This little cake is a winner as far as I am concerned. I served with whipped cream -- yum, yum!!
