I'm a big fan of oatmeal, and a big fan of bananas, so I've combined the two to make a delicious and healthy banana oatmeal bread, which makes a sweet snack.

Cook Time: 55 minutes
Total Time: 1 hour, 5 minutes
Ingredients:
- 1 1/2 cups whole wheat pastry flour
- 1 cup oats
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup firmly packed brown sugar
- 2 tbs canola oil
- 1/2 cup low-fat buttermilk
- 1 large egg, lightly beaten
- 1 tsp vanilla extract
- 3 medium very ripe bananas, mashed
Preparation:
Preheat oven to 350 degrees.
Combine flour, oats, cinnamon, baking soda, baking powder salt and sugar in a large mixing bowl.
Add oil, buttermilk, egg and vanilla, then fold in mashed banana.Empty batter in to an 8 1/2 inch x 4 1/2 inch loaf tin sprayed with nonstick cooking spray and bake for 50 minutes to an 1 hour.
