White Bean Dip

White Bean Dip

Fiona Haynes
Enjoy a creamy dip that's low fat and heart healthy. It's a great dip for whole-grain crackers or fresh crunchy veggies. Beans are a great source of protein and fiber, so cast aside those creamy, cheesy dips for a healthier bowl.

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 2 cloves garlic, chopped
  • 1 15-ounce can cannellini beans
  • Juice and zest of 1 small lemon
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp chopped fresh parsley
  • salt and pepper to taste

Preparation:

Place garlic, beans, lemon juice and zest, oil and parsley in a food processor or a blender, and blend until smooth, or desired consistency. Scrape down sides as necessary. Add another teaspoon of oil if you want a smoother dip.
