It's still very much soup weather, and my new favorite soup is this comforting roasted broccoli and cauliflower soup. Roasting the broccoli and cauliflower brings out their natural sugars, which enhances the soup's flavor. The recipe calls for chicken broth and milk, but to make it vegetarian use vegetable broth, and to make it vegan use extra vegetable broth in place of the milk, or use light coconut milk instead.
