You might be surprised to know that I am a firm believer in eating fat. Don't get me wrong, I'm not suggesting a bacon cheeseburger fest with an ice cream chaser, as appealing as that may sound. I simply want to acknowledge that fat is an essential part of our diet. We would not be healthy without it. Our goals should be to limit our overall intake of dietary fat to no more than 30 percent of daily calories--preferably less--and to use our fat budget wisely. This means reducing our intake of animal fats like red meat and butter, avoiding artificial trans fats found in processed foods, and focusing our reduced fat intake on these heart-healthy unsaturated fats.
