Spicy Slow Cooker Chicken Stew

If you're planning on being out all day and you want to come home to a hot meal that's ready when you are, then this spicy slow cooker chicken stew is just the thing. A few minutes' preparation before you leave for the day is all that's needed. I use chicken thighs in this stew because even though they higher in fat than chicken breasts, they remain succulent and tender after hours of slow cooking, whereas chicken breasts can become dry. This chicken stew needs no real accompaniment, although a dollop of low-fat sour cream or fat-free Greek yogurt on top makes a delicious addition, and a little whole-grain rice on the side will round it out nicely.
