Cream of Chicken Soup
As much as I enjoy chicken noodle soup and other broth-based chicken soups, I like to indulge in the creamier variety from time to time. This low-fat cream of chicken soup is something of a compromise. While it is still largely broth based, it manages to be creamy thanks to the addition of fat-free half and half, and a little cornstarch to help thicken the soup. The result is a satisfying low-fat version of a creamy classic.
