This low fat Mexican-style Rice and Beans recipe is a very simple throw-it-together kind of side dish that makes a great accompaniment to grilled or broiled chicken, pork or fish. You could also use the rice and beans as a filling for burritos, sprinkling just a little reduced fat cheese on top before rolling them.
