Southwestern Burgers

These tasty, low fat burgers use extra-lean ground beef combined with mashed black beans to reduce fat content and make moist, flavorful patties. The jalapeno pepper, cumin and cilantro add a nice little kick. Use a hotter chile pepper if you prefer, or omit it altogether if you want a more subtle flavor. Serve burgers on a whole grain or sourdough bun with plenty of low fat condiments. Fresh salsa and low fat sour cream work perfectly. Grill some of these burgers for the big game.

Super Bowl Recipe Exchange

Just in time for kick-off, here are our final contributions to the Super Bowl recipe exchange:

Kyle Phillips, About's Guide to Italian Food, has three suggestions. First, Arancini di Riso, which are balls of rice, filled with a filling, rolled in breadcrumbs, and fried until golden. Street food of the highest order, and as infinitely variable as the fillings that go into them. For cheese lovers, how about Gorgonzola in Crema? Gorgonzola is a wonderfully flavorful cheese and a fantastic base for a dip. For a sweet treat, try Cenci. Or Frappe, or Chiacchere, or... Lots of names for this quick and tasty Carnival pastry.

Southern Food Guide Diana Rattray suggests Game Day Nachos. These tasty ground beef and bean nachos can be arranged on a large ovenproof platter or shallow baking dish. Or, use several smaller baking dishes or ovenproof plates. This recipe should make enough for at least six to eight hungry fans.

Elaine Lemm, our guide to British Food suggests a couple favorites from across the pond, Chicken Tikka Masala Recipe and Cornish Pasties.

Potato chips and French fries are great, but add some extra color and flavor this year by serving Beet Chips or Baked Sweet Potato Fries from Molly Watson, Guide to Local Foods.
