Low Fat Potato Latkes

I know it seems like I'm a holiday ahead of myself, but you don't have to wait for Hanukkah, or even celebrate it, to enjoy potato latkes. These low-fat potato latkes are delicious any time. The key to low-fat latkes is to bake them at high temperature rather than fry them in oil. To make them crispy, be sure to squeeze out as much moisture as you can, and preheat the cookie sheet before placing the latkes on it. Enjoy these low-fat potato latkes with fat-free sour cream and applesauce.
