Pumpkin Squares

These little pumpkin squares make a perfect treat for your Halloween party. Light in texture, yet deliciously moist, they pack in a mere 63 calories per square, with only 1.5 grams of fat. Pumpkin itself is highly nutritious, but using whole-wheat flour and only a 1/4 cup of sugar makes these squares almost healthful. A smattering of chocolate chips adds a little decadence. The biggest challenge is limiting yourself to just one.

These didn’t turn out anything like I expected. They were really dense and a kind of odd texture without any kind of cakelike structure at all. They were also overwhelmed by the cocoa powder and chocolate chips. At the very least, these needed some sort of leavening to lighten them up and some additional sugar. I’d also recommend using the cocoa powder or the chocolate chips - not both.

April, Mea culpa. I omitted the all-important teaspoon of baking powder when writing up the list of ingredients (though I remembered to refer to baking powder in the preparation). I’ve updated the ingredients list. Apologies.
