Orange-Ginger Sole

With no added fat and lots of added flavor, these orange-ginger sole fillets make an ideal low fat, no-mess supper. Sealing the fish and vegetables in easy-to-prepare foil packets ensures they are steamed to perfection. Open the packets carefully as the steam will be very hot. Serve with microwaveable jasmine or whole grain rice, and have dinner on the table in a flash.
