Southwestern Shrimp

The great thing about shrimp is that they're quick and easy to cook. The biggest mistake people make is to overcook them so that they turn out tough and rubbery. Enjoy this Southwestern Shrimp dish with a side dish of rice.

One note of caution. Given that jalapeno peppers (and serrano peppers) are being looked at as another possible source of the recent salmonella outbreak, you may wish to use a different kind of chile pepper or used canned jalapenos in this recipe instead.
