When It's Too Hot to Cook

Friday July 4, 2008
When the temperatures are in the 80s and 90s, or worse, you last thing you want to do is cook. Even the idea of firing up the grill becomes less appealing. Plus, hot weather tends to curb the appetite, so steaming piles of food may not be what you're craving in any case. Keep things cool in the kitchen by preparing some easy, low-fat no-cook recipes to see you through the dog days of summer.

I made this dish today, the shrimp and edamame and artichoke salad. After all the cooking over the 4th of July I needed a cool snack. Yummy yummy. The edamame I purchased at Harry’s farmers market was awesome! Same with the boiled shrimp! My cats always get silly when I peel shrimp because I feed them the part you peel off their spine. Oh my gosh, me and my cats at this like crazy people curled up on the couch. My one cat Stinker actually grabbed a shrimp out of my bowl while I was trying to eat and while I was yelling at Stinker, Tuffy grabbed a shrimp too. It was hilarious. I had to finish eating this dish standing up because all four of my cats went into a shrimp frenzy. It was not the best way to enjoy my soaps standing up eating lunch but it was funny none the less. Me and my cats love shrimp dishes so keep them coming Fiona.
