Potato Spinach Frittata

A frittata is basically an open-faced omelet. My children describe it as an egg pizza, and I can see what they mean. They would probably call an omelet an egg calzone! I use egg substitute in this recipe, but you can always use a combination of whole eggs and egg whites if you prefer. Just be aware that this will increase the fat and cholesterol count. Serve this potato spinach frittata with a crisp green salad drizzled with your favorite low-fat or fat-free dressing.

Fiona, you have outdone yourself again.
I told my husband we will be having pizza tonight, he said great (little does he know he will be eating a low fat egg frittata shaped like a slice of pizza). LOL LOL. He comes home with pizza several times a week for the family and called and asked what I wanted on mine tonight and I told him we’ll be having home-made. He is so excited. I just hope the potatos and spinach will satisfie him. He always gets the italian sausage and canadian bacon and all the fattening stuff on his pies. A friend of mine said I should serve him O’Duels non-alcohic beer and see if he notices the difference, so I’ll have one poured in a frosty mug when he gets home tonight. He is a good bit over-weight and I have been concerned about his health for some time do to heart and liver problems do to all the eating and drinking he does. So wish me luck, this will be my own little science experiment tonight, I just hope he likes it. It looks fantastic to me and I am sure the kids will love it.

What a wonderful looking dish is was. I let mine stay under the broiler for an extra minute or two to brown the top a little. My husband likes EVERY THING well done, even his pizza.
Things started great with the O’Duels ready for my husband when he got home. After serving him several he knew something was up, I am the one who is usually asking him to slow down on the beer. Thats when things changed. I really can’t repeat what he said about the frittata, after all he was expecting real pizza and real beer. We really didn’t get to try it but it smelled great. I will say that my two boxers LeeRoy and Jenny really enjoyed the fritatta because my husband put it right in the dog bowls after getting upset about the whole thing. I guess I’m lucky that I even have internet service today to check back in because it really was wrong what I tried to do to my husband last night. We all got a little shook up last night but he is not so mad anymore. One thing is for sure I will not be trying to make the black bean burgers and trying to pass them off as ground chuck. I will have to make these dishes secretely and try them by myself.

Fiona, I finally had the opportunity to make this dish last night. WONDERFUL! I made the side salad as you suggested and it was the perfect compliment to the frittatta. I used a simple oil-vinager dressing (with a 4 to 1 vinager to oil ratio) with cracked pepper and a few pepperchinis. I will say that if my husband ever tried to put his meal that I cooked in the dog bowl for the dogs to eat he would be eating on the floor beside the dogs, out of THEIR bowl for a LONG TIME! Had he tried it he would have probably like it. What a jerk!
