Instead of Tomatoes

If you've crossed tomatoes off the menu until the source of the salmonella is discovered, here are a few quick tips for substituting raw tomatoes in your low-fat recipes:
  • Replace tomatoes in salsas with tomatillos, which, despite the similar-sounding name, are not related to tomatoes. Or use fruit such as mango, peaches, and melon.
  • In salads, substitute tomatoes with watermelon, strawberries, cherries, and raspberries.
  • Use cucumbers, red onions, roasted red peppers, or relish as toppings for sandwiches or burgers.
But remember, not all tomatoes are off limits. Tomatoes on the vine, cherry and grape tomatoes are unaffected. Check the FDA's web site for updates.
