Instead of Tomatoes

If you've crossed tomatoes off the menu until the source of the salmonella is discovered, here are a few quick tips for substituting raw tomatoes in your low-fat recipes:
- Replace tomatoes in salsas with tomatillos, which, despite the similar-sounding name, are not related to tomatoes. Or use fruit such as mango, peaches, and melon.
- In salads, substitute tomatoes with watermelon, strawberries, cherries, and raspberries.
- Use cucumbers, red onions, roasted red peppers, or relish as toppings for sandwiches or burgers.
