Cod With Lentils

Cod is a versatile fish. Like halibut, its more expensive counterpart, cod is mild enough so that most kids will eat it, and sufficiently "meaty" to make a satisfying entrée. Here’s a great nutrient-dense one-pot supper comprising cod fillet, tomatoes and fiber-rich lentils. Enjoy this cod dish with a crisp green salad and perhaps a slice of whole grain bread to mop up the juices.

I really liked this a lot. It has so much more flavor than I expected given the simple ingredients. It might be fun to add some sliced carrots next time.
