Crockpot Beef Stew

Just in time for St. Patrick's Day, here's a great, lower-fat alternative to corned beef: a simple yet delicious crockpot beef stew. Even the leanest beef will be made meltingly tender after spending a day in the slow cooker. For a great Irish twist, substitute Guinness for the red wine, and even some of the broth. Serve this lean beef stew with skinny mashed potatoes, or, in the tradition of St. Patrick's Day, some Colcannon.
