Chunky Turkey and Rice Soup

Apart from making a nice whole-wheat turkey and cranberry relish sandwich, my favorite way to use leftover turkey is in soup. I recently posted a recipe for Turkey and Lentil Soup, but if that’s a bit too earthy for you, try this Chunky Turkey and Rice Soup, which in my view is equally delicious. It’s a nice way to finish up that turkey breast.
