Butternut Squash and Pear Soup

Thursday October 11, 2007
Butternut squash and pears go well together in this lovely autumn soup. They’re both sweet, of course, but not overly so. Nonetheless, I like to add some curry powder to balance the flavor. With a slice or two of crusty whole-grain bread, this soup makes a great fall lunch, and a nice beginning to a Thanksgiving meal. If splitting a butternut squash seems too much of a challenge, you can cheat and buy a one-pound pack of ready-cut butternut squash from the grocery store. I grab mine from Trader Joe’s.
