It was hard for me to answer the poll because I eat low fat for almost all those reasons. My cholesterol was very high, I needed to lose wait, I have a heart condition and I also believe it is a part of a healthy life style. It really has been easy this time to get myself into shape. Thanks for all the great recipes you have on your site. I have used quite a few of them. Thanks again
I needed to reduce my blood pressure, so I started consuting lowfatcooking.about.com for help. Then, I found out that having a low fat diet helps with another condition, gout. I feel great now and no longer have bouts of gout!
I take Alli and I had no other choice. The side effects were too severe to do otherwise. I have to admit that it hasn’t been as difficult as I thought it would be and the results are worthwhile.
I’ve always been an Atkins dieter but as I grew older the Atkins diet stopped working for me. It’s been real hard to give up the slab-o-bacon every morning.LOL

i eat low fat because i had gall stones….it has been very helpful to learn how to eat more healthy…now i can pass it on to my children and they can eat healthy too
It’s nothing medical for me, I just got bored of doing a no-carb diet every so often. I started to be annoyed with meat-juices dripping off my chin every meal.
I get the same results using your low-fat recipies (the skillet chicken faux risotto is superb) and with a simple plan from about.walking, I’m feeling great, sleeping less, and always buying smaller clothes. Goodwill loves me.
We eat lowfat as part of a healthy lifestyle and to reduce the risk of heart disease and stroke.
We got to the point where we don’t even like the mouth feel of full fat food anymore.
btw….when I tried to click on SUBMIT VOTE, the Chicken, kale and white bean stew link overlaps it and I couldn’t vote….I just kept getting the recipe.
i need to lose weight or i will diiiieeee!!!!
i consulted a nutritionist/personal trainer when i got tired of my fat level never decreasing
it turns out my diet wasn’t as healthy as i had thought and thus my yo-yo like weight (though always too thin for my height it seems)
since i adapted a low fat diet for my every day life, my weight has been constant, i eat more (!) and my cholesterol is under control (i inherited it and lowering it is not an option really; rather i need to keep it at the level it’s at so as not to go on medication; i feel like i’m too young for that still)
i wonder why low fat = not tasty as far as most people are concerned!!!???
Americans have increased heart disease and cancer because of high animal fat diets. It is important to eliminate trans fats and try to keep saturated fats below 20 grams per day most days.
Canola oil has good Omega 3 to Omega 6 ratio (Americans get too much omega 6-corn oil) and is mostly omega 9 like virgin olive oil. I highly rec taking a daily purified fish oil tablet even though you are limiting fats in your diet. AND EXERCISE even if it is only going for a walk 3 times per week!!!
