I'm always looking for new salads, often just making them up as I trawl through my refrigerator and pantry to see what I have at hand. Tomato Quinoa salad is one of those impromptu creations. Quinoa may not be in everyone's pantry, but it's a staple in ours. We discovered quinoa a couple of years ago when my husband found out he had celiac disease. This means he is unable to eat foods containing gluten, ruling out anything with wheat, barley or rye. After a few weeks of eating rice or potatoes with pretty much every meal, we needed to find something else, and quinoa was it. Technically a seed rather than a grain, quinoa is highly nutritious, and a great substitute for couscous, bulgur or rice. Quinoa is easy to prepare, and goes with pretty much anything.
