Shrimp and Mango Salad

I love this sweet yet spicy shrimp and mango salad. Save time by using cooked shrimp and ready-cut mango, which you can find in the refrigerated section of many grocery stores. What the dressing lacks in fat, it certainly makes up for in flavor. I find the sweetness of ripe tomatoes helps offset the spiciness of the dressing. If you don’t have fish sauce, which is a Thai condiment, use soy sauce or tamari sauce instead. If you can't find arugula, spinach would make a great substitute.
