Orange Cream Pie

Monday May 14, 2007
Here's a delightfully light orange cream pie that's quick and easy to prepare, and requires no cooking. I choose to make this without a pie crust, partly because it sets perfectly well without one, and also because you lose up to 5 grams of total fat and 2.5 grams of saturated fat per serving. But if you want to have a crust, choose a reduced-fat one, or crush some low-fat vanilla wafers and press them on to the bottom of a pie plate.
